Why does my user agent mention browsers I do not use?

Historical compatibility. Nearly every user agent still claims Mozilla/5.0 and often Safari and Chrome, because sites once sniffed for them. The strings are largely legacy fiction.

Can a user agent be changed?

Easily — browsers expose it in developer tools and any HTTP client can set it freely. Never rely on it for a security decision.

Is the user agent going away?

It is being frozen and reduced to limit fingerprinting. Chromium is moving to Client Hints, where a site must explicitly request the details it needs.
